70% Shiraz, 20% Mourvèdre, 10% Grenache Noir

Winemaking Notes: Grapes were harvested by hand in the cool morning hours, ensuring optimal freshness. The bunches were carefully destalked before a 72-hour cold soak of the whole berries. Fermentation took place over 13 days in stainless steel tanks at a controlled temperature of 20-25°C. Gentle pump-overs were performed twice daily to extract delicate tannins. After fermentation, the wine was lightly pressed and matured.
Each component was vinified separately and subsequently blended before bottling.

Tasting Notes: This ruby-coloured wine showcases enticing aromas of red fruit, with juicy notes of cherry and raspberry. The medium body and soft tannins create a smooth, easy-drinking experience. The ripeness of the fruit shines through, delivering a balanced and approachable profile with a pleasant finish.

70% Chenin Blanc, 20% Grenache Blanc, 10% Viognier

Winemaking Notes: Hand-harvested at peak ripeness, the grapes underwent a gentle crush with limited skin contact to preserve delicate fruit aromatics. The juice was cold-settled for 48 hours to clarify before racking and a portion of light lees was reintroduced for added complexity. Fermentation with a selected yeast strain occurred at a cool 13-15°C for 16 days, emphasizing fruit expression. The wine was racked, fined and filtered before bottling. This wine is a blend of individual components, each vinified separately to achieve the desired character.

Tasting Notes: This wine displays a delicate yellow hue and presents an invigorating bouquet of fresh pear, crisp apples, and a hint of zesty lime. On the palate, it offers a vibrant burst of fruitiness, balanced by a lively acidity and subtle mineral undertones. The finish is clean and refreshing, with a bright, lingering hint of citrus.
